You will need to make bottle gourd and tomato soup
Chopped Gourd 2 cups
1 cup chopped tomatoes
Chopped Onion 1
2 cloves garlic, finely chopped
A piece of ginger, grated 1 inch
2 cups of vegetable broth or water
1 tsp olive oil or ghee
Salt and pepper to taste
How to make Bottle Gourd and Tomato Soup
- Heat olive oil or ghee in a large pot over medium heat. Add chopped onion, garlic, and grated ginger. Fry the onion for about 3-4 minutes.
- Now add chopped gourd and tomatoes to it. Mix the gourd with the onion well.
- Add vegetable broth or water, making sure the vegetables are submerged.
- After boiling, reduce the flame and cover the vessel. Simmer the soup for about 20-25 minutes or until the bottle gourd is soft and cooked.
- Remove the soup from the gas and let it cool slightly. Then, using a blender, blend the soup until smooth.
- Once again keep the soup on low flame. Add salt and pepper to taste. You can also add spices of your choice.
- Cook the soup on low flame for another 5-10 minutes so that the flavors meld.
- Serve the bottle gourd and tomato soup hot with crusty bread or crackers, if desired.
